How could I call myself a Spicy Millennial without a post about the joys of spicy foods? And what better dish to feature than NOODLES! As an Asian American, I love noodle dishes of any kind: ghost pepper spicy, curry-spiced, chili-infused, or just well-seasoned. Just make sure the sauce is plentiful and the flavor is on point.


While we all love an instant noodle, this post features the most mouth-watering, homemade, hot noodle dishes that are bound to induce some sweat and maybe even a Hot One's worthy tear, no matter your spice-tolerance.


Bring on the carbs!

Red pepper flakes, chili oil, and a fresh red chili give three complex layers of hot flavor to this satisfying dish. Chili Pepper Madness advises that you can use any type of dried noodle, but I'd suggest some wide stir fry rice noodles. Top with your favorite chili crisp - mine is Lao Gan Ma!

Sriracha and red pepper flakes are tempered by a little brown sugar in this sweet and savory lo-mein noodle recipe. Huy Fong Sriracha has been in short supply lately, so if you're feeling ambitious, you could make your own. Try this recipe from Kimchi Mom!


3. Extra Hot Hellfire Noodles - Pepper Scale 🔥🔥🔥🔥

The added veggies don't do much to stop the spice from jalapeño peppers, cayenne powder, and an added drizzle of hot sauce, but if you're a lover of hot and spicy, then this is your dish! Top with a soft boiled egg and a squeeze of lime to bring some balance to the flavors. Choose any noodle you like, but the chewy thickness of udon may help with the heat!


Made with rice noodles, this dish has the bonus of being both gluten-free and vegan! Eat with Clarity suggests adding extra veggies, your choice of protein, and a sprinkle of red pepper flakes if you'd like to shake things up. This gorgeously sauced dish is definitely worth a try!


Ramen noodles, gochujang, and ground turkey - this is my ideal noodle dish! This reminds me of a Korean-inspired egg roll in a bowl with the addition of cabbage, thinly sliced carrots, and scallions. My gochujang paste is on the spicy side, so use all 4 Tbsp at your own risk. Top with a Gochujang Sriracha drizzle to turn up the heat even more!


Now that your mouth is on fire, how do you like to combat the effects? My favorite tongue-soother is some premium vanilla bean ice cream! Read on for some more popular remedies.


  1. Try dairy products. Dairy products, such as milk, yogurt, and cheese, contain a protein called casein that can help bind to what gives spicy foods it's heat and wash it away. Whole milk is the most effective, but any dairy product will help.

  2. Snack on bread or crackers. Starchy foods can help absorb the capsaicin in spicy foods and relieve the burning sensation. Bread, crackers, rice, and potatoes are all good options.

  3. Drink water or other non-alcoholic beverages. Water can help to dilute the spiciness and make it less intense. Other non-alcoholic beverages, such as clear sodas, seltzers, and juices, can also help.

  4. Neutralize the heat with fruits and vegetables. Some fruits and vegetables, such as oranges, lemons, and tomatoes, contain acids that can help neutralize the capsaicin in spicy foods. Other fruits and vegetables, such as cucumbers and watermelon, can help to cool down your mouth and throat.

  5. Eat sugar. Sugar can help to coat your mouth and throat and make the burning sensation less intense. You can suck on a sugar cube, eat a piece of candy, or drink a sugary beverage.
